One thing that has always intrigued me about stills, at least these modern-day stills, is how beautiful they are with their shiny stainless steel and copper columns. The gauges and dials are a dream-come-true for a man like me. What I also love is how the chemistry of distilling hasn’t changed much over the centuries – yes, centuries. It’s a basic, raw, and natural process that is pure and yet you can produce simple, or complicated, flavor profiles that are so pleasing to your taste buds. We can’t wait to be in production!
